Macabeo and Chardonnay

Barrel fermented and aged 8 months in New French oak.
Denomination of Origin Costers del Segre, Les Garrigues.

A precise terroir distils in Cérvoles Blanc with a remarkable volume, minerality and acidity. Its late-ripening process, the high alcohol concentrations and the low Ph offers us a white wine with high phenolic magnitudes. Exotic fruit and pastry aroma shows incredible contrasts in this pioneer wine.

Two plots of Macabeo (Cametes wineyard) & Chardonnay (Oliveres wineyard) define its assembly.

Fermented and aged on their own lees in a “foudre” of 3.000L (Macabeo) and in French oak new barrels (225L & 600L of Saury, Dargaud&Jaegle and Berthomieu) with a frequent bâtonnage giving shape to it.

Mountain viticulture located at a between 700 and 800 metres altitude. At the foothills of the Serra de la Llena, a natural border within Priorat region and Serra del Montsant, it is an area of contrast between the Mediterranean and the Continental climatic conditions, with a low rain average and always soft winds that guarantee healthy conditions to the vineyards. The soil structure has a great water retention and an optimum marly texture for quality viticulture. The altitude of our vineyards and the temperature contrast in Garrigues region impacts on the grape skin thickness, making it easier for the anthocyanins and tannins to concentrate and enhancing acidity and freshness.
