Type of wine: High-expression red wine.

Varieties: Garnacha, Cabernet Sauvignon, and Merlot.

Vineyard: Soil is a crucial component of the terroir concept for wine production, as our Cérvoles plots supply water and nutrients to the vines based on their properties and environmental conditions. In this case, the key factor is the age of our vines, mostly planted in the 1980s. The roots penetrate different layers of the subsoil, where their structure influences drainage, root system depth, and ability to collect minerals. Thus, climate determines vineyard management practices, which we closely monitor, respecting the plant.

Altitude: Our plots are located at an altitude between 700 and 750 meters, protecting the aromas produced by extreme heat and ensuring the temperature contrasts produced by the typically cool nights of the Serra de la Llena in Les Garrigues, where Cérvoles is situated.

Soil: Loam-clay and loam soils, with an abundant gravel substrate, provide drainage balance and allow water retention in deeper layers. The structure of these soils, along with rainfall levels (an average of 270 liters per square meter), offers minimal water supply, which induces the necessary hydric stress for producing high-quality wine.

Vinification: Fermentation above 26 degrees. Maceration for 20 days. Periodic pump-overs and manual breaking of the cap. Each variety ferments and ages on its lees. Malolactic fermentation occurs in new French oak barrels.

Aging: The wine has been aged in new French oak barrels (MT+) from the Radoux cooperage (Radoux Blend is a selection of extra-fine grain French oak). Aging lasted 18 months with periodic batonnage during the first 5 months to add creaminess and volume.

Alcohol content: 15.5% Vol.

Tasting notes: Very intense and deep cherry color. Fragrant aroma of cherry, blackberry, and fresh black fruit with balsamic profiles. Notes of pepper, clove, and cedar appear. Vibrant entry on the palate, with lively tannins indicating the wine’s potential for a long life. The fruit is prominent, followed by vanilla, coffee, and chocolate notes. Controlled freshness and tension, with sweet fruit and good structure. A long-lived wine that can be kept for many years.

Pairing: Pairs well with red meats, roasts, and cheeses.
