Plot planted on a small plateau at the entrance of La Pobla de Cérvoles, on the northern side of the Serra de la Llena within the area known as Els Tossalets.

Historically, it was called Tossal dels Moros and had a funerary use due to its strategic location (an elevated site oriented towards Mecca). The plot can be seen from the highest hill on the estate, where remnants of an Arab castle are still present.

Currently, it is known as Tros del Tossal and is a 1.16-hectare plot situated at an altitude of 724 meters, planted in the years 2000 and 2001. The soil is silty-loam, calcareous, poor, sandy, and with many gravel stones, ideal for the Syrah variety.

The westerly winds during the day and the sea breeze in the evening convey the scents of the garrigue plants to the vines. Aromatic plants such as wild chamomile (santolina), everlasting, thyme, and rosemary leave a strong imprint on the personality of the Tros del Tossal.

This is dry-farmed land with low-yielding vineyards (3,120 kg/ha) that, now in full maturity, produce small and concentrated grapes harvested at the point of balance between the freshness of the fruit and the maturity of the tannins.

Agriculture: Respectful farming. Certified organic management with biodynamic and regenerative practices.

Climatology: Continental Mediterranean climate with strong thermal contrasts between day and night; partly due to the constant winds that blow in the area, with westerly winds in the morning and sea breezes in the afternoon. Low rainfall of 395 mm/year.

Harvest: Hand-picked on the 7th and 8th of October 2021, with a selection of the best grapes in the field at the time of harvest.

Elaboration: Fermented in a 2,000-liter stainless steel tank with gentle daily foot treading and maceration with the skins for 21 days. Aged for 9 months in 4 Radoux French oak barrels of 225 liters. Bottled on the 14th of September 2022. Production of 1,129 bottles.

Analysis: Alcohol 15.5% vol – TA = 5.5 g/L – pH = 3.49

Tasting notes: It presents a clean and bright appearance, with an intense violet-red color that reflects the vibrant character of this wine, with a deep hue. On the nose, it offers intense red and black fruit, dried and candied, violets, and many balsamic and spicy tones from the local aromatic herbs. On the palate, it is silky, with present tannins that make the wine long and persistent.

Pairing: Red meats, stews, cheeses. Due to its colloidal intensity, it may present sediments that do not affect its quality.
